Salade du Chef

  • Red romaine
  • Chicory
  • Mache lettuce, also known as
    Lamb's lettuce, field salad or corn
    salad
  • Endive
  • 1 julienned yellow squash
  • 1 julienned red pepper
  • Fresh parsley
  • Black Olives
  • 2 plum tomatoes, also known as
    Roma or Italian
  • 2 hard boiled eggsd
  • Toasted, sliced almonds

DRESSING:

  • 4 cloves garlic, minced
  • 2 teaspoons Dijon mustard
  • Salt
  • Pepper
  • 2 tablespoons red wine vinegar
  • 4 tablespoons olive oil

Mix ingredients of dressing together in large bowl. Add greens, squash,, red pepper and olives and toss. Arrange salad on individual plates. Slice eggs and tomatoes into four pieces each. Garnish salad platter by putting a slice of egg and a slice of tomato arranged at the top and bottom of plate. Sprinkle almonds in center. Serves 4
